Seared Scallops with Squash Puree and Parsley Gremolata by Chef Rajesh Shetty, Executive Chef, GVK Lounge by Travel Food Services (TFS)
100 gm Scallops
10 ml lemon juice
2 gm salt
50 gms Pumpkin
20 gms Carrot
10 gm Butter
10 gm sliced onions
2 sprig Thyme
5 gm garlic
100 ml water
Salt to taste
White Pepper to Taste
20 gems parsley
5 gms fried garlic
Few Lemon Zest
Salt to taste
2 no’s spring onion white
20 ml beetroot water
5 ml vinegar
10 gm sugar
- Heat Butter in a pan, add sliced onions and chopped garlic, Sauté till Translucent, Add thyme.
- Add cut pumpkin and carrots cook till slight caramelization occurs.
- Add water and cook till the vegetables are soft. Season with salt and pepper.
- Puree the veg mix in the mixer.
- Prepare pickled onions by blanching the onions in warm water and then immersing in the Beetroot water with vinegar and sugar.
- Marinate the scallops with Lemon juice , salt and pepper
- Sear the scallops in a hot pan for 15 second on each side and then finish in the oven for 2 minutes.
- For Parsley Gremolata, chop the Parsley add in fried garlic, Lemon Zest and Seasoning
- Arrange on a plate with Squash puree, topped with Cooked Scallops, Parsley Gremolata and Red Onions
