Take paneer (40g), red and yellow bell pepper(40 g), tomato(1 medium chopped and deseeded), parsley(2 spoons chopped), salt (2 pinch), pepper (2 pinch).
– Now take a non stick pan.
– Add 1tsp olive oil.
– After 30 seconds, add chopped vegetables and paneer.
– Now add pepper and salt.
– Saute it for 2 minutes.
– Add parsley for garnishing.
Keep it aside.
-Take 2 tablespoon gram flour and 2 tablespoon amaranth flour. Mix them.
– Knead the dough by adding water to it.
– Roll the dough to make it big round in shape.
– Now heat the griddle and place the chapati over it.
– Cook until the chapati puffs up and turns light brown in colour.
– Now flip the chapati to cook similarly from the other side.
Now take the chapati and put the vegetable stuffing in the center and roll both the sides of chapati to make it a roll.
You can wrap this in butter paper so that stuffing doesn’t fall down.
So your healthy gluten free Kathi roll is ready. You can have it with coriander-mint green chutney.
