It is definitly time consuming but the result is awesome.all the more when you eat it is heaven.anytime anyday my favourite.hope you all like this combo.
Recipe for idiyappam
Take one cup rice flour /idiyappam flour
One and half cup water
You can also take one cup water and half cup thin coconut milk -idiyappam comes out white in colour.
Take a pan and dry roast flour .dont roast it too.much..keep it aside .
In a deep pan preferably cooker add one and half cup water and boil it for sometime.when it boils simmer the gas and add the fliur slowly .add one spoon coconut oil/sunflower oil.when the flour absorbs all the water switchoff the flame and close the cooker with the lid and rest it for 15 mins.after 15 mins take the dough and place it in a large plate add one spoon oil and knead the dough nicely.when we do this the idiyappam comes out very soft.after kneading the dough place it in idiyappam maker and prepare idiyappam strings .keep it in steamer for 5 -6 mins.
Recipe for coconut milk kurma
Mixed veggies (potato,beans,cauliflower, carrot and peas) .
Soak 10 cashews in warm water for5 mins
One spoon garam masala
Take thick coconut milk one cup
Tomato puree one cup
In a pan add oil and ginger paste (if you want you can add garlic paste also)
After the raw smell goes add all the cubed veggies.add little salt and keep it covered for sometime till the veggies are cooked .then add little turmeric powder ,tomato puree and again cook for another 5 mins .add one spoon garam masala.then add cashew paste thick coconut milk and keep it only for a minute otherwise the coconut milk will cuddle.after adding coconut milk dont keep it for long time.switch off the flame.add coriander leaves and serve .this can be served as side dish for chappathi,poori,pulka,nan ,idly dosa appam and idiyappam.
